toasted acorn squash seeds with parmesan cheese + a fall salad

I’ll bet you have had your fill of pumpkin seeds after all your Halloween pumpkin carving. But did you know you can toast acorn (or most any) squash seeds? They taste nearly the same as pumpkin seeds, but without all the effort of cutting up a whole pumpkin. Now you can try all sort of toasted pumpkin seed recipes. :)

Step one: Toss seeds in olive oil, salt and pepper, and a pinch of dried sage

Step two: Toast in oven at 350*F for 5-10 min until light brown. Add parmesan cheese.

Step three: Toast for another 2-4 min until cheese is toasted.

Step four: Add to your favorite fall salad or eat a handful at a time.
